Best Summer Salads While Vacationing

My wife and I decided to take a spontaneous summer vacation to the UK, as neither of has had ever been there before. I must admit, I was a bit sceptical about the whole trip. I am not adept at adapting to change but my wife persisted, and like every husband on the face of the earth, I relented. When we arrived in London she insisted on yet another radical idea. “We should rent a VW camper!” she exclaimed, as we saw one go whizzing by the bustling streets.

Before I knew it we were in a VW camper, driving through England, Scotland, and Northern Ireland like a couple of 1970’s hippies in a radical love wagon. I must admit, it was awesome. The views of lush landscapes in Scotland and Northern Ireland were breath taking, and I was starting to get used to this fly by the seat of your pants lifestyle. That is, until, my wife had another idea.

“I have never once seen you eat a salad,” she said. I explained that I had in fact eaten a salad. One time. When I was eight. And just like that there was a new rule to the vacation. I must eat a salad at every restaurant we go to. Once again, I relented.

On day one of what I liked to call my “Salad Experience,” we stopped at a restaurant in Scotland. My original plan was to get the smallest appetizer salad they had, but during my perusing of the menu something caught my eye. It was a dish called “The BLT Salad.” Being American, I instantly knew that BLT stood for bacon, lettuce, and tomato. They had me at bacon. I decided to abandon my appetizer salad, take a leap of faith, and order The BLT Salad as an entrée.

I was not disappointed. The Summer Salad had bacon, lettuce, and tomato. In addition, there was onions and celery, both chopped into small pieces. To top it all off, the salad was served with a healthy compliment of ranch dressing. Being the carnivore that I am, the bacon satisfied my meat appetite, and when the crispy bacon and onions mixed with the juicy tomatoes entered my mouth, I knew I was hooked. Needless to say, the plate was licked clean within minutes.

On day two of my Salad Experience I found myself ordering the Outer Banks Salad. As always, I need my dose of meat, which in this case turned out to be blacked Mahi-Mahi. It was served over chopped romaine lettuce, jicama, roasted corn, tomatoes, tortilla chips, and red onions. On top of the Mahi Mahi, the chef had placed three slices of avocado with pico de gallo on top. The Outer Banks Salad was even better than the BLT salad, and once again the plate was licked clean.

My wife was so impressed by my lack of complaining about the salads that she decided the third salad could be my final one. Therefore, on day three of my Salad Experience, I ordered a dish called the Atlantic Salad. It had salmon as a protein, which was placed atop onions, mixed greens, cucumbers and tomatoes. It was also drizzled with lemon balsamic dressing, which I had never tasted before. Once again, it was delectable.

My Salad Experience was finally over, and I looked forward to a big juicy burger. But maybe, just maybe, I’ll order a salad as an appetizer. We got back in our VW camper and headed out on our next adventure.
